These egg chorizo breakfast tacos are so delicious and versatile, too. I wanted to give you an idea of how to use that delicious chorizo I made last time. If you haven’t seen it, check out my post on how to make “Mexican Style Chorizo”.
If you want to take a short cut on these tacos, you can just buy the chorizo. I have seen it at “international” markets and grocery stores. Also, I don’t know if your Walmart would carry it, but I have even seen chorizo at my local Walmart. Trader Joe’s has a soy version that I have purchased before. But, my favorite is still my homemade version đ
If you are using store-bought Mexican chorizo, you will need to peel the chorizo out of the white film that covers it and then fry it up in a pan with oil until it is fully cooked and crispy.
Like all recipes, you can take this one and make it your own. In this case I made it simple, just chorizo and eggs, but sometimes I like to add tomatoes and onions and cook them down at the same time as the chorizo.
Don’t forget to have your favorite salsa ready when you make these tacos, and chop some cilantro and onion to sprinkle on top, too!

Scrambled Eggs and Chorizo Breakfast Tacos
These delicious breakfast tacos are so easy to make and so tasty, Perfect for breakfast, brunch or dinner. Check out my homemade “Mexican Style Chorizo” if you would like to make your own.
Ingredients
- 1/8 pound ground Mexican style chorizo $1.57
- 4 eggs $1
- 6 corn or flour tortillas $1.86
- 1 tbsp cooking oil $.15
- salsa or hot sauce to taste (optional, for topping) $.05
- chopped cilantro to taste (optional, for topping) $.05
- chopped onion to taste (optional, for topping) $.05
Instructions

Heat up a skillet to medium heat, add the tablespoon of oil and chorizo, stirring and breaking it apart until it is fully cooked. I like mine with a crispier texture, so I let it toast up a bit.

Add the eggs and stir until the eggs are fully cooked to your preference and reserve.

Heat up another skillet on medium high heat and cook the tortillas. About 1 minute per side until they are soft and warm. Assemble your tacos with the egg mixture.

Add toppings as desired. Chopped cilantro, chopped onion, and your favorite salsa.
