You will find meatballs in chipotle sauce a very common dish in Mexican kitchens because of it’s delicious flavor, easy to find ingredients, and no complications!
This simple dish has been one of my top favorites forever. I remember asking my mom after school what we were having for dinner and if it was meatballs I would be so excited!
If you love classic Italian meatballs, but are ready to explore a different flavor and literally “spice it up a bit,” then try them with a Mexican twist. The tomato sauce with the spiciness and delicious flavor of the chipotle makes these meatballs AMAZE-BALLS!
For the meatballs you’ll need
- 1 pounds of ground beef
- 2 graded garlic cloves
- 1/2 graded sweet onion
- 1/4 cup bread crumbs
- 2 table spoons of milk
- Monterrey Jack cheese cut in cubes
- Salt and pepper to taste
For the sauce
- 1 chipotle pepper in adobo (from the can)
- 3 big tomatoes
- 1/4 yellow onion
- 1/4 yellow onion cut in julienne
- Salt and pepper to taste
- Cilantro to garnish (optional)
Instructions
Combine ingredients: Place the meat in a bowl, add the graded garlic, graded onion, bread crumbs, table spoons of milk and salt and pepper to taste. use your hands to knead the mixture until well combined (try not to overwork it).
Make the sauce: Place the tomatoes in a blender (to make it easier on your blender cut the tomatoes in pieces. Do not add water!) along with the 1/4 onion and the chipotle pepper.
If you don’t want it too spicy and one chipotle is too much for you, you could add just half of the chile. Or if you like it spicier then you could even add 2 chipotles. This will depend on personal preference.
Make Meatballs: Form 1 1/2 inch meatballs until all meat is used, and stuff each one with a cube of Monterey Jack cheese.
Cook them: Heat 1/4 cup of canola oil in a shallow pan over medium high heat. Add the julienned onions and cook until translucent and soft. Add the meatballs and fry them just enough to sear them on most sides. They don’t have to be completely cooked because they will finish cooking when you add the sauce.
Add the sauce: Add the tomato sauce to the pan, cover it and let it simmer until the sauce thickens and changes colors. Make sure than when the sauce is ready the meatballs are cooked through. About 10-15 minutes. Add salt and pepper to taste.
Garnish: Garnish with a little bit of cilantro and enjoy!
