“Alambre de pollo”, I don’t know the exact translation of it but I can tell you what it has in it. It’s basically chicken, bacon, onion, yellow bell pepper, red bell pepper and melted cheese (in this case Oaxaca cheese) fried together in a pot.

This dish is awesome because it’s easy clean up, you can do it all in one pot and done! I usually make tacos with “alambre” but you could have it as a main dish with Mexican rice.
There are many ways to make alambre, some people use chorizo instead of bacon (I have never tried it that way but maybe in the future I will, and share how it turned out). Some people prefer to only use green bell pepper instead of the yellow and red pepper. It’s a matter of preference– You can play around with the recipe and add your favorite peppers to this dish.
I start by frying the bacon in a hot non-stick pan. Once it’s done add the peppers and onion.
Cook for one minute and add the chicken. Heat until the chicken is fully cooked. Add the cheese and enjoy! As simple as that.
To make the tacos make sure you heat your tortillas in a skillet beforehand. You can use whatever type of tortillas you prefer– flour or corn– they are both good with the alambre!
Enjoy with a delicious homemade salsa and don’t forget the lime! I hope you like this dish.
